Cauliflower Sushi
Are you on a diet where you are not allowed to eat carbs? Keeping everything low-carb? Or do you simply want to try out a different kind of sushi? Look no further; cauliflower sushi are the perfect way to accomplish that. They even taste similar, sweetly or non-too-sweet and the best thing: you can choose it yourself.
Ingredients:
- Nori paper
- Cauliflower piece
- 2 Tablespoons of cream cheese
- Vinegar
- Artificial Sugar
- fillings of your choice

How to:
Shred the cauliflower and put it in a blender until its small - I didn't have a blender, therefore I used an almond mill which made my texture creamy.
Cook it with a bit of water and quarter of a cup of vinegar until you are satisfied it can be eaten;
Add two spoons of cream cheese and the amount of sugar and salt you please. Set it aside and let it cool.
Prepare your fillings, I used avocado, olives, cucumber, chicken, calamari and mustard.
Now you place your sushi mat on an even surface, place a nori paper on it and spread one third of the rice dough on it. Pressing it evenly with your hands.
Your fillings should be aligned in the middle now, when you start to roll it, you better look it up on how to do it properly – even if I just went in with no idea and it turned out fine. The key is to press and hold the pressure.

Well, as you can see, my first cauliflower sushi turned out well and they tasted amazing!!! So going to do it again. They are even able to be eaten warm or on the next day. Hope you have as much joy as me when making them.
