Pickled Scrambled Eggs 

Ingredients

2 eggs
4 slices of smoked bacon
1 handful of chopped broccoli
1 slice of Dark Rye Bread
4 pieces of cheese (Edamer)
50ml oil (I took the oil from a tuna can)2 pickles

How to

Heat the oil in a pan and start by making the bacon and broccoli crispy. Do not overheat it or otherwise you'll have burnt bacon. Been there, done that ;)

Now add a bit of cheese, not all of it though. Let it melt; until you are able to crack the two eggs and stir it slightly. Don't scramble it too much or you won't get an omelette. Wait till you can see the egg white bubble and then flip it in half.

Push it to the side and add the bread; letting it soak up the oil. Finish it with adding the pickles and drape it onto a plate. Best thing is the slight fish flavor and the result of soaking the fat into the bread.
