Vegan: Delicious sweet bars - Part One

Cooking vegan is very interesting and I enjoy to experiment with it.

I love to cook for any kind of clientele. In this case it was for my vegan friend Liz, but even my other friends (Vegetarian, Keto and 'the usual') were very very pleased with the result. They almost licked the plate clean. haha I split it in three parts, each few hours the other version will go online.

1) Cranberry - Coconut - Rawslice

This is the one at the front. It has a coconut-almond bottom; a dried cranberry middle and a dark chocolate top. Whenever I try new recipes, I only make a small portion of it, so don't be surprised if my ingredients tend to look less ^^

Ingredients:

150g Cashews
150g dessicated coconut
3 Tbsp Maple syrup


150g dried cranberries

6 dates
1pkg vanilla sugar
100g dessicated coconut
1 teaspoon Xanthan gum
2 Tablespoons melted coconut butter

How to:


  1. Soak the Cashews in water for a few hours. Let them drain and throw it into a food processor with the coconut and maple syrup. Blend it until it has a sticky texture.
  2. Press this into a tin lined with parchment paper and freeze it in the refrigerator.
  3. In the mean time; shred the other ingredients in the blender - adding the coconut butter last.
  4. When its done you put the berry mixture on top of the other mixture and freeze it. 
  5. For the top I used 90% chocolate without milk powder and melted it in a waterbath - the last step is simple: just pour the melted chocolate on top and freeze it again. Tada.
Its very tasty... if you think its not sweet enough when you nibble at it in the making; then add sugar to your liking. One has to nibble after all :p
