Delicious Indian Spinach with Coconuttofu and Curry-Lentils.



I had a friend over who is a vegan, therefore I wanted to surprise her with something good - this is only the main course, I created some Vegan Date Brownies and Vegan Nutella Fudge as well. 

Feeling a bit oriental? Then heat some spinach, add curcuma, salt and pepper and let it cook. Add a chopped onion as well as garlic for flavor - then when it has simmered, you add 100ml or more of coconut milk for the sauce. To finish it off you have to sweeten and spice it up to your liking; in the end it has a sweet fruity taste because of the milk, but is also extremely creamy as it soaked into the spinach. Delicious.

To that you can either serve curry rice or curry lentils; by powdering the cooked rice or lentils with some spicy curry.
The tofu is easily made in a pan by heating oil with soybeans and browning the tofu on all sides. 
This dish does not take more than twenty minutes, except if you have to thaw the spinach from the freezer ^^
