Kebap without carbs




Starter: Guacamole with Zucchini and Proteinbread
Pre-course: Crusty Carbfree-Cheesepizza and Mini-Tacos
Main course: 'Fake' Kebap
Dessert: Mascarpone-Walnut-Cake

So, the day for my big food event was finally here. I managed to make all of the guests smile, laugh and speechless as they were too busy eating. It made me so happy :)

Starter: 
Preparing the guacamole is easy, take two ripe avocados, mix them with salt and pepper, lemon juice and garlic. That is it.  Easy right?

Pre-course: 
This takes more preparation time. To be honest, I had help with the pizza dough - this blog entry http://www.ditchthecarbs.com/2015/04/23/fat-head-pizza/ helped me and it is the BEST recipe for a dough. I know because my last pizza made with a cauliflower dough didn't work at all; it is no shame to get your inspirations or ground recipes from somewhere. I mix them all up, creating my new one in the process.
Anyway. Follow this recipe, then add oregano and garlic to your liking - put tomato mark and all your toppings on it, preheat it in the oven and finish warming it up when the guests are coming.


The second part of it were the tacos, getting the trick out of baking them in the pan correctly is tough - but if you manage it, it works well. I used this dough for the kebab bun as well. It consists of almonds, coconut milk, flaxseeds, almond milk, salt, pepper and two eggs. Mixed together it should be a middle-thick consistency, brown it in sesame oil but take care that it doesn't stick to the pan.

For the filling minced beef is needed. Brown onions, put tomato mark, paprika powder and chili into it, add the beef and stir until it has a reddish color and isn't raw anymore. When it is all done, arrange it on a plate, the pizza on one side and the Taco with salad, zucchini and salsa on the other (tomatoes with basil and balsamic vinegar).

Main course

The Main course was not trickier, do the same procedure with the dough for this one as well, just make them thicker and not that big. The filling consists of the usual onion-salad-tomato-yoghurtsauce-mix, only that I used turkey instead of lamb (price), which ultimately doesnt make much of a difference. I simply cut the turkey filets into stripes, marinated them with paprika, oil and wok spice before browning them on the grill for a bit. That's what I call a fake kebab, however the flavor is equally fine.

Dessert: 
Unfortunately, I do not have a photo of the cake, still with your creative mind you can draft something up: First, you prepare the bottom by melting butter in a pot, adding walnuts and pressing it into the pan. Put it in the fridge and let it cool for a while. Then you continue to mix Mascarpone a bit of cream together with bitter almond aroma and stevia. Melt gelatine, let it cool and stir it under the mascarpone. Cooled in the fridge and ready to eat :D


 That was it. I loved creating this menu, each one of these are carb-free and taste really good.
