Eclairs with Buttercreme Filling

Heat 140ml of water, melt 80 grams unsalted butter.
Then slowly add the 30 grams vanilla whey powder, 100 grams almond flour until you get a soft dough. Depending on the mixture it can either be soft then you have to add more almonds, if its doughey then put it off the flame and let it cool off in a cold water bath whilst moving the dough. if its lukewarm, add two small eggs one by one.

Fill it into a plastic bag and create stripes on a baking sheet.
Bake them at 220 degrees until the bottom is slightly brown and they dont fall apart.

For the filling let them cool of, cut them open, and in a separate dish whip 150g cream, adding soft butter and cream cheese to it. Additionally you can fill it with vanilla pudding or spice it up with chocolate creme. Enjoy. Tell me how it worked
