Topfennockerl (lowcarb)

Curd cheese Dumplings
or as we Austrian's say: "Topfennockerl"


Have you ever lusted for something sweet during your ketodiet? Well, here is your solution. Just because you are on a high fat-lowcarb diet that does not mean you have to abstain from sweet desserts. 


Ingredients:

  • 2 eggs
  • 350g Curd Cheese (20% fat)
  • 150g Cream Cheese
  • 1 handful coconut flocks
  • 4 tablespoons of Sweetener
  • 2 tablespoons of coconut flour
  • a bit of lemon juice
  • 1 scoop protein vanilla powder



How to:

Mix the eggs with the curd cheese and cream cheese, see to it that you don't have any flockings in it. Now you can add the other ingredients bit after bit. 

When you have a solid dough take two table spoons and form dumplings; which should be thrown into the boiling water immediately. The water is not allowed to boil too much or the form of the soft dumplings gets destroyed. They are done when the swim on the top of the water, having grown to twice their size. 


For the finish I made a sauce by heating poppy seeds with coconut-chocomilk, cream cheese and butter. You can sweeten this to your liking of course.  As additional flavor I added chocolate, walnuts and cocoa. I hope you enjoy the meal and the recipe; it totally tastes like 'Germknödel' and like the original.
