Pork with Peanuts in Coconut-Currysauce
This weekend I've made a cooking trip to India and Thailand. Cause I made a bowl of Curryflavored pork with Peanuts and coconut sauce.
How to:
- Roast your meat (mainly pieces with fat and cords) in tuna oil until parts of it turn brown.
- Add curry to give the meat flavor and color.
- Continue to add the cut peanuts and sunflower seeds (amount of your choice)
- Spice it with pepper and salt.
- Melt a piece of processed cheese (paprika flavor) in it.
- Finish it off with 100ml Coconut milk which should soak into the peanuts and the meat.
- If you want, you can also add a bit of non-sweetened peanut butter.
- Let it cook until you are satisfied with the consistence.

I really liked this dish, it made me think of India a lot - if you are allowed to add carbs, you absolutely HAVE to make a Thai rice to it!! Or a wet rundkornreis.
