A Raspberry finish to the Empanadas
Made my favorite cake again, but I guess this time the texture didn't work out so well because of the sugar or the eggs. Not sure which, nevertheless the taste was still delicious.
Mix
- 350g Curd cheese
- 100g sugar (add more if you want it sweeter)
- one package of vanilla sugar or even better a vanilla aroma
- two table spoons of Maizena
- a bit of salt
- half a package of baking powder
- juice of half a lemon
- 150g cream cheese
together with one egg and two egg yolks .
The separated egg whites should be whisked until they can stand on its own. Then you have to lift it under, adding lots of air to the mix; do the same with 400g of berries.
Put in the oven at 180 degrees for almost an hour and you can enjoy the fluffiness for yourself.
